Chronicle of the Week: Champagne lovers welcome!

Located in Celles sur Ource in the Aube region, on the Côte des Bar, Domaine Pierre Gerbais has a terroir whose Kimmeridgian limestone is more akin to the soils of the Chablis and Sancerrois regions.
The “Champ Viole” parcel cuvée is a splendid pure Chardonnay, made from a perpetual reserve from 2011 to 2018, drawn in June 2019 and disgorged in May 2022, i.e. aged on lees for 36 months.
A small production of 5300 bottles dosed at 3 grams per liter with a masterful nose, where fresh white fruit and iodine perfume intermingle, aromatic and saline with a lively, straightforward finish.
