Chronicle of the Week: Jacques the inspired
The small vineyard of Montgueux stands in stark contrast to the Côte des Bar, where Pinot Noir reigns supreme. On this chalky hillock some ten kilometers west of Troyes, Chardonnay is king.
In 1999, Emmanuel Lassaigne took over the family domaine from his father Jacques. Today, he has become the flagship of this little-known part of the Aube region, producing Blanc de Blancs of the highest quality.
Vinified entirely in wood, “La Colline Inspirée” is a Champagne with a Burgundian feel, with aromas of candied lemon, toasted almonds and fresh butter.
