Chronicle of the Week: “L’Abricot du Roulot”

Introduced to distillation by his father, it was only 15 years after his death, when he found 12 bottles of apricot liqueur in the family cellar, that Jean-Marc Roulot decided to revive this “Proust’s madeleine”.
Very attached to the quality of the raw material, he selects the best organic Bergeron apricots from the orchards of his colleague Laurent Combier in the Rhône Valley.
Its moderate sugar content of 160 grams per liter, well below that of traditional liqueurs between 200 and 250 grams per liter, brings freshness and purity of fruit to achieve a perfect alcohol/sugar balance.
The result is a caramel color, a delicate nose of ripe apricot underlined by a hint of sweet spices. Rich on the palate, but never heavy – a delight.
