Weekend Tasting: Clément Lavallée, value awaits the years
Located on the northern fringes of Burgundy, 10 kilometers southeast of Auxerre in the charming little village of Saint-Bris-le-Vineux, the young domaine Clément Lavallée is part of a talented new generation on the Burgundy scene.
The son of winegrowing parents, Clément Lavallée trained as a winemaker and worked at Chapoutier and Château Margaux, among others, before vinifying his first vintage in 2019, on just 1.5 hectares of leased vines.
Clément Lavallée works by banning all synthetic products, using gravity as much as possible and a moderate amount of sulfur. Paying close attention to ripeness, Clément never harvests too early or too late.
Taking advantage of the family estate’s infrastructure and supported by his sister Caroline, Clément’s beginnings are very promising. We were immediately seduced by their sincere, pure and unvarnished wines.
