Chronicle of the Week: Flavien Nowack

While Flavien Nowack continues to help his father Frédéric on the family estate at Vandières in the Marne Valley, he now also produces his own Champagne wines in parallel.
A confidential cuvée of 2,600 bottles made from a single Pinot Meunier grape from a mid-slope plot in Châtillon-sur-Marne, “La Fontinette” is a magnificent, intense and pure Champagne.
The small plates are put in the big ones with clear wines fermented with indigenous yeasts, limited sulfur, barrel aging, corking, low and precise dosage of 0.8 grams per liter.
