Viticulture: Organic farming (2010), Biodynamic farming (2013), vines 45 years old on average, Chablis or Cordon de Royat pruning, ploughing by tractor and, for some plots, by horse
Vinification: 15 to 20 days of alcoholic fermentation with indigenous yeasts, natural malolactic fermentation, 100% aged in oak barrels, stirring of the lees in the barrel, no filtration, no fining, native yeast fermentation, aged on laths, bottles handled by hand

Biodynamic viticulture and old vines form a duo that is on the verge of excellence. The third generation at the head of the estate, Erick De Sousa brilliantly continues the work of his father and grandfather, who have always favored respectful vineyard practices to produce unprecedented champagnes. Since 2020, his children Charlotte, Julie and Valentin have taken up the torch admirably. They are constantly experimenting to ensure that each year brings out the purest expression of each terroir. Working several parcels on horseback, fermenting with indigenous yeasts, vinification in oak barrels for certain cuvées: each practice contributes to the elaboration of exceptional champagnes. They combine ripe grapes and freshness on the palate for an unforgettable tasting experience.
