From the magnificent terroirs of the Côte des Blancs, Pascal Doquet’s Champagnes represent the very best that Champagne has to offer. True to his convictions, Pascal follows his path, and we are delighted to follow him on this bubble-strewn path.
Pascal Doquet has been working on the family estate since the early 1990s. The year 2004 marked a turning point for him when he bought out his sisters’ shares, making him sole master of this beautiful estate. Pascal Doquet then embarked on his greatest quest: the implementation of sustainable viticulture, favoring listening to and respecting plants. His research and experimentation naturally led him to convert all the vines to organic farming, with 2010 being the first year he was awarded the precious AB label.
The respectful steps taken in the vineyard are continued in the cellar, where the typicity of the terroirs is emphasized. Fermentations are carried out using indigenous yeasts, and ageing continues in the cellar to allow the Champagne to acquire its full typicity. The result is precise, expressive champagnes of remarkable purity.
