Saint-Aubin has been shining for several vintages now. This recognition is largely due to the work of Domaine Hubert Lamy. Thanks to its rigor and unfailing precision, the domaine has propelled the terroirs of this appellation to the forefront of the Burgundy wine scene.

Excellence is a Lamy family trait. Founded in 1973 by the father, Hubert Lamy, the estate has made a name for itself through its work in the vineyard and the quality of its wines. Hubert’s boldness led him to plant Chardonnay on parcels historically cultivated with Pinot Noir, such as La Princée and Derrière Chez Edouard. These attempts, judged more suited to the soil typicity, proved fruitful, producing wines of exemplary purity and balance.
Hubert’s son, Olivier, has been continuing this adventure at the domaine since 1996, and now looks after this wonderful heritage of 18.5 hectares of vines. Drawing on his past experience in France and abroad, Olivier brings new ideas and methods to further enhance the quality of his wines. High (or even very high) density planting is also favored to encourage deep rooting of the vines, enabling them to better withstand periods of water stress. In this way, they are better equipped to cope with the vagaries of the weather, producing grapes of optimal ripeness.
Each plot is then vinified separately to reveal the character and typicity of the terroir. The proportion of new oak is reduced in recent vintages, and the wines are aged for longer in large containers to preserve the purity of the fruit and give them greater ageing potential.
The result is luminous, incredibly energetic wines that can be enjoyed in their prime or cellared for several years.
