Vinification: Hand-harvested, hand-sorted, cold maceration at around 10° for 5 to 6 days, natural alcoholic fermentation for 2 to 3 weeks, one punching of the cap and one pumping-over per day during alcoholic fermentation, malolactic fermentation, aged 15 to 18 months with 30% new barrels and 70% one-wine barrels, massaging 3 to 4 weeks before bottling, gravity-fed bottling

Domaine Robert Chevillon has been present on the Côte de Nuits since the beginning of the 20th century and is a benchmark in the region. No Grands Crus here, but Premiers Crus with an assertive personality.

Passed down from generation to generation, the estate’s winegrowing heritage is breathtaking. It extends over 13 hectares of vines, including some of the finest Premiers Crus in the Nuits-Saint-Georges appellation, such as Les Saint-Georges, Les Vaucrains and Les Pruliers. Denis and Bertrand, Robert Chevillon’s sons, look after this heritage with passion and a love of a job well done. Their practices respect the terroir and the grapes, both in the vineyard and in the cellar. The grapes are hand-picked and optimally sorted, allowing only the healthiest, perfectly ripe grapes to enter the winery. After long ageing periods of between 15 and 18 months, the wines emerge full of energy and character.
